Danny and I have started playing a new game when we make dinner. It is very similar to the Food Network show "Chopped". Danny picked out ingredients, presented them, and I had to cook a dish with them. These ingredients weren't as difficult as you see on the show but this is a great way to challenge yourself to be creative.

Braised Short Ribs in a Mushroom Soy Broth

Ingredients

  • 1 1/2 lbs Short Ribs with Bone
  • 4 Cups Mushroom Stock
  • 1/2 Cup Soy Sauce
  • 1 Teaspoon Hot Chili Oil
  • 1 Teaspoon Chopped Ginger
  • Star Anise
  • 1/2 lb Small Potatoes
  • 1/2 Teaspoon Coriander
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Sage

The ingredients Danny picked out were short ribs, mushroom broth, soy sauce, ginger, star anise, and potatoes. I knew that I wanted to braise the short ribs in the pressure cooker to get them tender.

 

 

Before braising the short ribs I used the hot chili oil and minced ginger to brown the meat. Turn the heat on the pressure cooker pot on high. Put the oil and ginger, when the oil is hot brown the meat.

While the ribs are browning create a spice mixture with the cumin, paprika, garlic, coriander, sage, and black pepper.

 

 

After the meat has browned add the mushroom broth, soy, star anise, 1 cup of water, and the spice mixture. Put the top on the pressure cooker and cook for 30 minutes when the cooker starts to whistle.

While the short ribs are cooking take the potatoes and drizzle with the hot chili oil. Pre-heat the oven to 350. Put the potatoes in and roast for 25 minutes. I served these on the side of the dish but should have pulled them out early and added them to the pressure cooker pot for 5 minutes.

 

 

Once the meat has cooked for 30 minutes open the pressure cooker and let simmer for another 5 minutes. I added some flour to thicken the broth. Taste the broth and season accordingly.

 

 

The potatoes get crispy after 25 minutes. I would have cut these in half here and added to the pot with the short ribs. The way I prepared them wasn't great for mixing with the ribs.

 

 

The judge (Danny) said that this was a great meal. He suggested adding the potatoes to the short ribs to incorporate them more into the dish. This was also a tad over salted. I think if you salt after you cooked the ribs you will be better off.
